City Cruises UK is part of the City Experiences division of the Hornblower Group, a global leader in world-class experiences and transportation services. We operate public dining and sightseeing cruises as well as private charters for corporate events, birthday parties, weddings, or other special occasions across London, Poole and York.
The Head Chef is responsible for driving the food operation at City Cruises for our public dining and private hire cruises which will see considerable growth over the next 2 years. Within this role, the Head Chef will provide menus, costings, food development & mentoring the kitchen team . Food is your passion along with our guest service along with growing the careers of the F&B team
- Create menus for current products, private hires and seasonal festivities. Oversee the management of a team of 7 Chefs, plus agency, to ensure a high-quality service is delivered, providing coaching and training when required. To recruit and restructure as necessary to achieve the business goals within budget. Manage the kitchen operation including paperwork and administration Develop the service offering and lead the design of menus and food innovation for the site. Have responsibility for all aspects of Health & Safety and Food Hygiene Work and train all team members with regards to allergens implementation the necessary procedures throughout your team and sharing with others. Ensure financial documentation and accountancy of the unit (and those from suppliers) is accurate and within agreed budgeted levels Costings and creation of new menus. Providing checks on menu pricing throughout the season. Be an Ambassador for our RESPECT Service system Providing checks on menu pricing throughout the season Encourage the team and mentor/train to enable promotion from within as the company grows
Requirements and Qualifications
- Previous experience in a Head Chef or Senior Sous, with experience of volume catering and hospitality Qualification in culinary arts, or similar is desired, but not essential. Industry acumen and knowledge of external catering developments and innovations Excellent managerial skills and experience of managing a team of Chefs Industry acumen and knowledge of external catering developments and innovations Good communication skills and ability to communicate at all levels Good financial awareness Personal innovation and passion for quality food Experience working in a standards/compliance environment People leadership and development experience. A personal desire to be developed and to learn in your role. Strong communicator; and comfortable in contributing to the overall company strategy. Ability to build relationships and influence with all levels of the business.
